Chicken Tandori Pizza recipe


















Ingredients:

For dough (for two large pizza)
Maida               3 cups
Salt                  1 tsp
Yeast                1 sachet or 1 tsp
Olive oil             2-3 tbsp
(or any cooking oil)
Sugar                ½ tsp

For toping:
Chicken boneless cubes   1 cup
Yogurt                                         2 tbsp
Shan chicken tandoori masala      2 tbsp
Ginger garlic paste                       1 tsp
Capsicum (cut in cubes)               1 cup
Onion (cut in cubes)                     1 cup
Pizza cheese                              shredded
(You can also use cheddar and mozzarella cheese)

Method:
Marinate the chicken with yogurt, ginger garlic paste and tandoori masala and keep it aside for about 2 hrs then cook this chicken in a frying pan.
Mix sugar and yeast in half a cup of lukewarm water and set aside fro 10-15 minutes. You will see frothy top which would indicate that the yeast is active and you can use it.
            In a large bowl mix flour and salt, add the yeast mixture. Knead dough with some more water until it forms a ball, just like chapatti dough.
            Brush a big bowl with some oil and place the dough, cover with plastic wrap and let it sit fro 2 hours on the kitchen counter. The dough will rise and will become 3 times bigger than the actual size.
            Punch the dough to let the air out, knead again and leave it for another 45 minutes until it rises again. Your pizza dough is ready now. Divide it n three portions.
            Roll one portion with a rolling pin according to the size of your pan and place it inside the pan.
Then combine chilli garlic sauce and tomato sauce and place 2-3 tbsp on top of your pizza. Sprinkle half of the cheese on top. Then scatter chicken cubes, onion, capsicum on the top then again sprinkle the remaining cheese.
Cook pizza in a preheated oven, set on 230 oC until the pizza fully rises in about 5 minutes. Lower temperature to 180 oC and bake for another 5 minutes or until golden crust on top. Cut into slices and enjoy

Black Forest Cake Recipe

















Ingredients:
Eggs                             4
Refined Flour (Maida)     3/4 cup
Caster sugar                  1 cup
Baking powder               2 tsp
Vanilla essence             ½ tsp
Lukewarm water 2 tbsp
Cocoa powder                ¼ cup

Cream icing
Cream                           1 packet
Icing sugar                    ¼ cup

Method:
-          Separate egg white and whisk to form stiff, then add sugar and beat it.
-          Now beat egg yolk with vanilla essence and hot water.
-          Take a bowl and mix refined flour, cocoa powder and baking powder in it, then add this in egg white and sugar mixture and beat it, now add egg yolk mixture in it and mix it well
-          Grease your baking tray with butter and sprinkle some refined flour (Maida)(so that after baking, cake comes out easily). Pour the mixture in it.
-          Preheat your oven 15-20 before baking at 180 oC, bake the cake at this temperature for 10 minutes, when cake rises, slow down the oven temperature to 120 oC and bake the cake for 30 minutes more.
-          After baking allow the cake to cool then do the icing on it.
-          Coat the whole cake with cream icing and sprinkle crushed chocolate on the top of the cake you can also place cherries.

Cream Icing:
First beat the cream then add the icing sugar and beat it again, if the cream doesn’t get thick after beating then put it in freezer for about 10 minutes and then beat it again, your cream should be thick so that it can easily get coated on the cake.

Chicken Manchurian Recipe


Ingredients:
Chicken cubes               200 gms
Chicken stock (yakhni)   1 ½ cup
Tomato ketchup             3 tbsp
Vinegar                         2 tbsp
Soya sauce                   1 tbsp
Salt                              ½ tsp
Red chilli powder            ½ tsp
Sugar                            ½ tsp
Corn flour                      3 tsp
Egg                              1
Tomato                         1
Onion                            1
Oil                                ½ cup and 1 cup for frying
Green chilli                    2
Ginger and garlic            as required

Method:
-          Marinate the chicken cubes with 2 tsp corn flour, oil, egg, salt and keep aside.
-          Finely chop the onion, tomato, green chilli, garlic and ginger.
-          Pout oil in a wok, and deep fry the chicken fro a little while and strain it.
-          Then in a pan fry ginger, garlic, then add onion and chilli and cook it further.
-          Add tomato, chicken stock and let it boil.
-          Then add tomato ketchup, soya sauce, vinegar, red chilli powder.
-          Dissolve corn flour in water. Add this mixture in the gravy to make it thick, serve hot with rice

Noodles Kebab Recipe


I love this noodle kebab, and it gets ready very quickly.

Ingredients:
Noodles                                    1 packet
Egg                                          2
Noodles masala Sachet              1
Red chilli powder                        1 tsp
Onion (Chopped)                        1/2

Note: I use knorr noodles (Chatpata Flavor)
And donot use salt because the Masala of noodles is salty.

Method:
-     Boil the noodles and drain it.
-          Beat the Eggs, add red chilli powder, noodles masala and chopped onion and mix it.
-          Now add noodles in it and mix it well.
-          Heat some oil in frying pan , with the help of big spoon put the noodle mixture in shape of kebab in frying pan. (do not deep fry these kebabs).
-          When one sides of kebab is cooked then turn to other side, till golden brown
-          Serve with chilli garlic sauce

Malai Kebab Recipe















Ingredients
Mincemeat                                1 kg
Ginger garlic paste                     1 tbsp
Salt                                          as per taste
Red chilli powder                        1 tbsp
Gram Masala Powder                 1 ½ tbsp
Raw papaya (ground)                  2 tbsp
Fresh coriander (chopped)          ½ bunch
Mint leaves (chopped)                 6 - 8
Bread slices                              4
Eggs                                         2
Fresh Cream                             ½ cup
Oil                                            for frying

Method:
-     Soak bread slices in 1 cup milk fro 10-12 minutes. Darin the milk by pressing each sleice firmly with a wooden spoon
-          Knead mincemeat with bread slices, ginger garlic paste, salt, red chilli powder, garam masala, papaya, fresh coriander, mint leaves and green chillies
-          Add fresh cream to the mince meat and mix well. Make oblong shaped kebabs on wooden skewers and refreigerate for some time
-          In a wok, heat oil on medium heat fro 3-5 minutes. Dip the kebabs in beaten eggs and fry till golden brown.

Tip: the kebabs can be GRILLED in an oven or BARBECUED without being dipped in eggs. Just glaze them with a little oil from time to time.

I personally prefer baked and barbecued kebabs, they taste really really good :)

Chicken Nuggets Recipe

Ingredients:
½ pound skinless and boneless chicken breasts (cut into cubes)
Salt to taste
1 Tablespoon Black pepper
½ teaspoon sugar
2 tablespoons soya sauce
1 tablespoon vinegar
3 Eggs (beaten)
Bread crumbs
Oil (for frying)

Method:
  1. In a large bowl mix vinegar, soya sauce, salt, black pepper and sugar.
  2. Marinate the chicken in the mixture for as long as possible.
  3. Dip the chicken in eggs then bread crumbs and fry it until golden brown.
  4. Serve hot with ketchup.
